Ableskiver
(not for use with cookie stamps)
Ingredients
Separate: 3 eggs
Beat:
3 egg yolks
Add to yolks: 2 cups buttermilk
2 teaspoons sugar
1/2 teaspoon salt
Add: 2 cups flour
1 tablespoon baking powder
1 teaspoon soda
Fold in:
3 stiffly beaten egg whites

Method
Heat ableskiver pan. Put 1 teaspoon oil in each hole and fill completely with batter. Let bake until slightly crusty on bottom and turn with icepick. Turn and bake until brown to form round pastry. Put a slice of apple or a tablespoon of applesauce in center of pastry before last turn. Serve with jam and sugar.
