Aunt Kama's Caramel Cream Sandwich Cookies
These are simple
shortbread cookies. This recipe was passed down to my aunt from her
mother-in-law. Use the Browned Butter Frosting to fill the cookies,
making a sandwich using two cookies.
Ingredients
1 cup butter or margarine
3/4 cup brown sugar
1 egg yolk
2 1/4 cup flour
Browned Butter Frosting:
2 tablespoons butter or margarine
1 1/4 cup 10x sugar
1/2 teaspoon vanilla
4 to 5 teaspoons cream
Method
Combine margarine and brown sugar. Cream together well. Add egg yolk and flour. Mix well. Chill in refrigerator. When ready to bake, preheat oven to 350° F. Shape cookie dough into 1/2 inch balls (marble-sized). Place on ungreased baking sheet and flatten to 1/8 inch thickness by pressing down with cookie stamp. Bake 12 to 15 minutes. Let cookies cool thoroughly.
To make the frosting:
Slightly brown butter in sauce pan. Remove from heat and blend in sugar. Add vanilla and cream. Beat well.
