Brown Sugar 'N Spice Cookies

These spicy cookies are reminiscent of the Dutch windmill cookies.
1 cup butter or margarine, softened
1 1/2 cups packed brown sugar
1 egg
3 1/2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves


Cream butter or margarine and brown sugar; add egg. Beat till light and fluffy. Thoroughly stir together flour and spices; add to creamed mixture gradually, mixing well. Cover. Chill about 1 hour until firm. To shape cookies, follow directions above (if using a springerle rolling pin, roll dough to 1/2-inch thickness.) Transfer cookies with spatula onto ungreased cookie sheet; bake in a 350° F. oven for 10 to 12 inutes. Remove from cookie sheet; cool on wire rack. Store cooled cookies in a tightly covered container. Makes about 14 3 1/2-inch cookies, or 2 1/2 to 3 dozen 1 1/2-inch cookies.
