Mints & Candies - Buttermint Cookies
Buttermint Cookies

1 pound butter, softened (no substitutions)
1/4 teaspoon salt
1 egg
1 teaspoon vanilla
1 (7-ounce) box of buttermints, crushed
1/4 teaspoon peppermint extract
4 1/2 cups flour


Whip the butter until very smooth and fluffy. Add the mints, salt, egg and vanilla. Mix well. Add flour until thoroughly blended. Roll into balls the size of walnuts. Flatten with a cookie stamp that’s been dipped in sugar. Bake at 350 degrees for 10 to 12 minutes. Makes about 4 dozen.
