Cocoa Cream Filled Sandwiches
Ingredients
1 1/2 cups butter or margarine, softened 2 cups sugar 2 eggs 1 teaspoon vanilla 4 cups all-purpose flour 1 1/2 cups unsweetened cocoa powder 2 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1/2 cup milk
Cream Filling: 1 1/2 cups sifted powdered sugar 3 tablespoons butter or margarine, softened 1 tablespoon millk 4 ounces marshmallow cream
Method
Cookies: Cream the butter and sugar. Add the egg and vanilla; beat well. Stir together the flour, cocoa powder, baking powder, baking soda, and salt. Add to the creamed mixture alternately with milk; mix well. Form into 1-inch balls and chill well in the refrigerator. Place on an ungreased cookie sheet. Press with cookie stamp. Bake at 325° F. for 10 minutes. Immediately remove to a cooling rack. Cool completely before assembling sandwiches.
Cream Filling: Combine the powdered sugar and the butter. Add the milk. Stir in the marshmallow cream until it is smooth and creamy.
Sandwiches: Assemble cooled cookies, sandwich-style, with cream filling in the middle and the cookie stamp designs facing out on both sides of the sandwich.
