Stamped Cookies - Honey Christmas Cookies
Honey Cookie Stamp Cookies

1/3 cup butter or margarine
2 tablespoons honey
1 teaspoon lemon zest
3/4 cup almonds, ground
1/4 cup sugar
1 teaspoon vanilla
1 1/4 cup all-purpose flour


In large bowl beat butter or margarine with mixer on medium speed about 30 seconds. Add sugar, honey, vanilla and lemon zest; beat well. Add flour, beat well. Stir in ground almonds. Shape into 1-inch balls place 2 inches apart on an ungreased cookie sheet. Using a cookie stamp dipped in sugar or flour, flatten cookies to 1/4-inch thick. Bake at 325° F. for 8 to 9 minutes or until golden brown. Let cool on cookie sheet for one minute, then transfer cookies to wire rack to cool. Makes about 30 cookies.
