Shortbread with Powdered Sugar - 2 Recipes

Recipe #1 - Shortbread Stamped Cookies

1 cup butter, softened
1/3 cup powdered sugar
1/4 cup firmly-packed brown sugar
2 cups all-purpose flour


Preheat oven to 325° F. Cream butter and sugars until fluffy. Gradually add flour until blended, but do not over mix. Spray cookie stamp with vegetable spray. Shape dough into walnut-sized balls and place them on a cookie sheet. Press with cookie stamp until cookie is about 3/8–inch thick.. Bake for 10 to 15 minutes until golden brown.

Recipe #2 - Shortbread

1 cup butter
2/3 cup powdered sugar
2 teaspoons vanilla
1/8 teaspoon salt
2 1/4 cups flour


Preheat oven to 350° F. In a medium mixing bowl cream butter, sugar, vanilla and salt. Add 2 cups flour and mix until dough is smooth. If dough feels sticky, add additional 1/4 cup flour as needed. Dough should be soft but not sticky. Roll into 1 1/4-inch balls and place onto ungreased cookie sheet. Spray cookie stamp with vegetable spray. Dip stamp in flour; shake off excess (repeat flour as needed). Gently but firmly press dough with desired cookie stamps. Bake 10 to 12 minutes, or until golden brown. Cool 5 minutes on sheet, cool completely on wire rack.
