Scandinavian Ginger Cookies

2 1/4 cups sugar
3/4 cups water
3/8 cups dark corn syrup
1 1/4 tablespoon cinnamon
2 teaspoons ground cloves
1 tablespoon ginger
1/2 lb + 2 tablespoon margarine
1 tablespoon baking soda
8 cups flour


Combine sugar, water, corn syrup, cinnamon, cloves and ginger in a saucepan. Place over modrate heat and stir until sugar is dissolved. Remove from heat, add margarine, and stir until cool.

Dissolve baking soda in 1 tablespoon of water and add to above mixture. Pour mixture into large mixing bowl. Add flour gradually and work until the dough is firm. Form into large balls of dough (perhaps 2-3” in diameter to make 4” diameter cookies), and place on ungreased cookie sheet. Stamp with cookie stamp which will flatten the ball and make the cookie spread. Bake in 350 degree oven for 10 miinutes. For smaller cookies shorten the time accordingly. Remove and let cool (if the kids will let you!)

Yield:  2 1/2 dozen 4” cookies.
