Lemon Cookies - Tricia’s Lemon Cookies
Tricia's Lemon Cookies

Cream together until smooth:
1 stick butter or margarine
1 egg
1 cup sugar
1 teaspoon lemon or vanilla extract
2 cups flour
1/4 teaspoon salt
3 teaspoons baking powder


Gradually add flour mixture to creamed ingredients until well mixed. At this pint you an add any other ingredients that you wish such as M&Ms, coconut, oatmeal, nuts, etc (however, note that these may cause lumps in the cookie that interfere with the cookie stamp design). Roll the dough into balls and rolling them in cinnamon and sugar is also good. Just flatten with a fork or cookie stamp. Drop on a cookie sheet with a teaspoon. Bake 10-12 minutes at 375° F.
